My Menu and Slow Cooker Chicken and Dumplings Recipe

Sunday 30th

Breakfast-malto meal
Lunch-oven pork chops w baked potatoes and veggies
Dinner-pineapple and cottage cheese

Monday-31st
Breakfast-waffles
Lunch-frozen
Dinner-sweet and sour chicken, rice and broccoli

Tuesday 1st
Breakfast-toast
Lunch-egg salad sandwiches BB carrots
Dinner-slow cooker chicken and dumplings and fruit

Wednesday 2nd
Breakfast-french toast and bacon
Lunch- chips with salsa and white bean dip
Dinner-Not your average sloppy Joe's and fries

Thursday 3rd
Breakfast-cereal
Lunch-sandwiches w baby carrots and bananas
Dinner-Hoppin John, fried cabbage and corn bread

Friday 4th
Breakfast-waffles
Lunch-frozen
Dinner-nachos

Saturday 5th
Breakfast-cereal
Lunch-soup
Dinner-OUT FOR LEXI B-Day!!!

Slow Cooker Chicken and Dumplings


Servings: 8

Ingredients:
4 skinless, boneless chicken breast Halves cut into strips
2 tablespoons butter
2 (10.75 ounce) cans condensed cream of chicken soup
1 onion, finely diced
4 cups all-purpose flour
2 tablespoons baking powder
2 teaspoons salt
2 tablespoons white sugar
2/3 cup butter
2 cups milk

Directions:


1. Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover.


2. Cover, and cook for 3 to 4 hours on High.

3. About 30 minutes before serving, In a large bowl, whisk together the flour, baking powder, salt, and sugar. Cut in the butter until the mixture resembles coarse meal. Gradually stir in milk until dough pulls away from the side of the bowl.
4. Drop biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center.
