My Menu!


This is a menu is a little bit of a  new concept for our family.  Not sure if you noticed or not but I haven't been posting my menus. I have been very confused.  I apologize if this gets too personal but I will tell you a little what I have been going through. I had been introduced to 5 diets to follow. Due to health issues.  Not easy and contradicting to say the least. (the Dash diet, weight watchers, the paleo diet  gluten free and vegetarian.)  Argh! No way could I follow all 5. My bishop had spoken to our congregation about the atonement and how wasn't just for sin but for anything we need to change in our lives and He, my Savior can and will help me and provide the answers I need.  Ask and ye shall receive right? I decided to take it to the Lord for answers. I also began studying our Word of Wisdom every single morning along with my regular scripture study. I believe I was given the answer. The answer for me and my house is that we will eat meat sparingly 3 or 4 to 1 ratio of veggie meals to meat meals for now, stop eating gluten and increase our vegetable and fruit intake. BTW my research on gluten is both fascinating and staggering.  That stuff has some crazy bad things associated with it!! I am not saying that this is right for everyone in any way shape or form but I have been living it for about 2 weeks and I am already feeling much better! It is right for me and my house. Also FYI the kids at school and when they are away from the home are free to chose what they will eat.  Jason and I are not making them chose or live this diet.  It is their choice but they seem to be very supportive and happy to eat better and we are all eating this way at home. PS once we are a custom to eating GF we will start working on removing the sugar.  Also researching sugar is an eye opener.  Even though not mentioned in our Word of Wisdom specifically it does say to not use anything harmful to the body and I would say sugar is.  Baby steps is the key for me. Eventually I hope to be living sugar free also. 
*Oh something i forgot to mention...we are also giving up pork and beef.  Fish and chicken are our meat choices.


GREEN SMOOTHIES EVERY MORNING FOR MOM AND DAD (and kids who want them) which contain 6-10 servings of fruits and veggies for each person)

Lunch-Shrimp and cucumber salad
Dinner-Minestrone 

Monday 16
Breakfast-oatmeal and applesauce
Lunch- turkey cheese rolls stuffed celery and orange slices
Dinner-  Cobb Salad w rice Crispy treats for FHE

Tuesday 17
Breakfast-cereal and oranges
Lunch-cheesy chips and salsa
Dinner-  Slow cooker creamy ranch chicken over brown rice flour pasta and curry roasted cauliflower

Wednesday-18
Breakfast-oatmeal and OJ
Lunch-vegetable soup w GF crackers
Dinner-Simple tomato ricotta over brown rice pasta

Thursday 19
Breakfast=cereal and oranges
Lunch=tuna dip w GF crackers and baby carrots
Dinner-Saucy Asian Meatballs over brown rice and asparagus

Friday 20
Breakfast-oatmeal
Lunch-beans and cheese w corn chips and veggies
Dinner-Date night for mom and dad pizza for the kids per their request

  1. I am so glad you did this post!! You are amazing and such an inspiration. Most people keep doing what they have always done even in the face of a health scare! You rock! Oh and I would love to see your recipe for the curry cauliflower!

    1. Thanks! I am doing my best anyway. Its scary and I do have pitty parties (as I walk through the bakery etc LOL!) but in the end I know it is right for me. I have put a link to the roasted curry cauliflower. Just click!

Italian Nachos

My sweetheart and I would order this from Johnny Carino's. He was first and as soon as I tried it I had a hard time ordering anything but this. Although, I really loved their lasagna, oh, and their chicken parmesan sandwiches AND their wedge salad...OK I loved Johnny's! I was very sad when they closed in our area. Luckily for us we knew that dish by heart and have been able make it at home. I think you will love it! If you could bring back one restaurant from your past which one would it be?
